Basically Lime Granita with Vodka

It’s extremely hot in the South African Cape at the moment and not less so in Australia where raging bush fires keep fire fighters a little too busy. Those of us living in the south would welcome the freezing temperatures and abundant rain that are keeping our northern cousins in their woolens and out of their bikinis. This Granita is perfect for the sweltering heat that’s keeping southerners awake at night; actually it has many functions because it’s a really cool dessert and even an aperitif! Serve in itsy bitsy shot glasses or become inventive and do your thing.  

Ingredients

  • 175g caster sugar
  • 8 limes, juice and zest
  • 2 lemon grass stalks, roughly flattened with a rolling pin
  • 150ml vodka
  • 300ml soda water

Method

  • Put the sugar, zest,  lime juice and the lemongrass stalks in a pan with 150ml water.
  • Heat gently, stirring until the sugar dissolves then simmer gently for 5 minutes, allowing it to cool completely.
  • Strain the liquid into a firm container and then stir in the vodka and soda water.
  • Freeze for 2 hours until almost firm – then, using a fork, break the mixture into large flaky crystals.
  • Return to the fridge for another 30 minutes, break again and serve in small glasses with slices of lime.
