Executive Food – Coffee Mousse

No matter how you look it, there comes a time when everyone needs to make dessert in a hurry – and that includes those of us that are too exhausted from a day at the office to switch on the kettle. The answer is to resist the temptation to buy something, to switch on the kettle anyway and to look for a dessert that won’t take more than a couple of minutes to make – this is that dessert. A mousse is as easy or as difficult as you choose to make it and chocolate is something that most people love, so today we picked one that takes no time at all and is just as tasty as any of the more complicated versions.

Ingredients

  • 400 g dark coffee chocolate – Lindt make a really good one
  • 4 egg yolks
  • 150 fine castor sugar
  • 250 ml whipping cream
  • 8 egg whites
  • 1 heaped tsp excellent instant coffee dissolved in a little coffee liqueur

Method

  • Melt the chocolate over boiling water.
  • Whisk the egg yolks, 130 g of the sugar and the coffee until frothy and light.
  • Add the chocolate very slowly to prevent any reaction, stirring well until it’s completely taken up by the egg and sugar mixture.
  • Whisk the cream until stiff and doubled in size are formed and then incorporate the egg and coffee chocolate mixture into the cream.
  • Whisk the egg whites and the other 20g sugar until stiff.
  • Fold into the chocolate mixture carefully until well mixed and place into individual serving glasses, cover and refrigerate until ready to serve.
