Executive Food – Pork and Chili Noodles

Noodles are always popular and spicy food has become de regeur of late. Pork is cheaper than most other kinds of meat and we all know how healthy it is. This dish is perfect for the busy executive and the recipe can be doubled up to serve four people comfortably. Make sure that you buy the ingredients the day before as well as some mango ice cream for dessert and you’ll be ready and able to prepare a great meal in a few minutes while your guests sip on their drinks. If your guests are big eaters, prepare a classic Chinese chicken soup with garlic, ginger, spring onions, chillies, black pepper and goji berries for colour and Vitamin C.

Ingredients

  • 300 g wholewheat noodles
  • 450 g lean pork, trimmed of excess fat and sliced into thin strips
  • 1 tbsp rapeseed oil
  • 1 clove garlic, peeled and crushed
  • 1 large piece of root ginger, peeled and grated
  • 1 green chilli, finely chopped
  • 2 tbsp dark soy sauce
  • 2 tbsp water
  • 2 medium carrots, peeled and sliced thinly
  • 1 bunch spring onions, trimmed and shredded
  • ½ head bok choy leaves, shredded
  • 1 tsp clear honey
  • 1 tsp sesame oil
  • 1 tsp chilli powder

Method

  • Boil the water, add the noodles and cook for a few minutes until al dente, drain well and set aside.
  • Heat oil in a wok and stir-fry the garlic, ginger, green chili and pork for about 6 minutes until pork is browned.
  • Add 1 tbsp soy sauce and 2 tbsp water, stir in the carrots and stir-fry for a few minutes until the carrots just start to soften.
  • Add the spring onions and bok choy leaves and stir well for about 2 minutes until softened slightly but still crunchy.
  • Pour in the rest of the soy sauce with sesame oil, honey and chili powder and stir into the cooked drained noodles.
  • Add to the pork and vegetables, mixing well and making sure that the dish is well heated through.
  • Pile onto a warmed serving bowl.
