Basically Green Tomatoes and Eggs

This recipe sounds very much like Dr. Seuss’s Green Eggs and Ham but it’s great for breakfast and for lunch and is extremely quick to make – double up if you have more guests.  Instead of serving it with bread or toast, why not try it with rice this time – the Yunnan way? We realise that green tomatoes aren’t always very easy to find here in the west, but make an effort and try this recipe for a change – there’s no reason why we have to eat eggs only at breakfast and this is super for lunch – after all, the lunchtime omelette is really quite tired now, isn’t it? Eggs are easy to prepare, easy on the pocket and easy on your time.

Ingredients

  • 4 large eggs
  • ½  tsp freshly  ground white pepper
  • ½  tsp coarse salt
  • ½ tsp  freshly ground black pepper
  • 1 tbsp corn oil
  • 3 green tomatoes, peeled and cut into 1 cm pieces
  • 2 spring onions, thinly sliced

Method

  • Whisk the  eggs and beat well with salt and pepper.
  • Heat the oil and fry the tomatoes for 2  minutes, add the eggs and whisk continuously until they just start to set.
  • Add the spring onions and serve
