Christmas in Japan – Terikyaki Chicken

View CommentsEven though the Japanese aren’t traditionally Christians, Christmas is celebrated here – it was introduced by the Christian missionaries and for many years was only celebrated by those who had turned to the Christian faith. Today, however, it’s celebrated with enthusiasm and the idea of exchanging gifts appeals strongly to the Japanese people. As everywhere else in the world, shops are decorated and exquisite displays of gifts can be seen in the windows – children look forward to this special day as excitedly as all other children everywhere else in the world. Little Japanese girls, especially, are fascinated by the
story of the Baby Jesus who was born in a manger – firstly because they love babies and secondly, because of the cradle – Japanese babies don’t sleep in cradles. Over and above exchanging gifts, the Japanese eat turkey on Christmas Day and in some areas community Christmas trees can be seen. Homes are decorated with evergreen and mistletoe and carols are even sung. Hoteiosho, who looks like a kind old man, carrying a huge pack and has eyes in the back of his head (to see the children in case they disobey) brings gifts – just like Santa Claus does. One of the more unusual Christmas dishes, is Chicken Teriyaki which is why we decided to feature it today.
Ingredients
- 6 chicken fillets
- 1 tbsp vegetable oil
- 1 tsp sesame oil
- 2 tsp clear honey
- 1 tbsp soy sauce
- 1 lime, juice only
- splash of water
- 6 spring onions
- 2 tsp sesame seeds
Method
- Just heat the vegetable oil in a medium wok and then fry the chicken fillets for 2-3 minutes.
- Stir in ½ tsp sesame oil, the honey and the soy sauce and cook it until the chicken caramelises.
- Now put a griddle pan on the heat and grill the spring onions on both sides until well charred.
- Add the lime juice and water to the chicken and then remove the wok from the heat.
- Drizzle the rest of the sesame oil over the spring onions, then sprinkle over the sesame seeds.
- Serve the teriyaki chicken on a bed of griddled spring onions.
