Basically Tomato and Goat’s Cheese Linguine

In the past two weeks we’ve been feasting and paying attention to food to such an extent that most of us will relish the thought of going back to basics. There are few things as satisfying as pasta and this linguine recipe is as basic as it gets. Goats cheese has a unique taste and combined with sweetness of cherry tomatoes, the nutty taste of the green olives and the saltiness of the capers this dish is, certainly, a memorable one. Make 2 or 3 times the amount when you have guests as this is enough for only one hungry person – it takes  less than 30 minutes and paired with a glass of good dry wine, is a meal to look forward to.

Ingredients

  • 200g linguine
  • 250g cherry tomatoes , halved
  • 6 anchovies, chopped
  • A good handful green olives,  pitted and halved
  • 1 tbsp salted capers , rinsed
  • 50 g basil , roughly chopped
  • 100 g  goat’s cheese  – make sure it is goat’s cheese and not a combination

Method

  • Cook the pasta until it is al dente and drain.
  • While the pasta is cooking, put the tomatoes, the olives, the anchovies, the capers and the basil into a bowl and season well.
  • Add the hot pasta, toss to combine and add the goat’s cheese in small blobs and toss once.
